I have a plastic bowl that I keep on my desk for the trash paper towels scraps I use when cleaning up my cockatiels poo. My birds like to hang out on it, which is fine with me but my one cockatiel likes to chew on them, especially the part where the shit is. I have tried to tell him and tried to discourage it, but he gets angry with me and it so happy doing it. Should I let it go? Will it hurt him? I know there are some animals who do that as a normal part of digestion but I didn’t think that included birds.

you’re right, birds don’t need to eat their **** to aid in digestion. and, they really shouldn’t be eating their own feces. my suggestion would be to replace the bowl with one that has a lid. it would be just as convenient for you, but eliminate the problem.
